Now, typically I’m not a huge fan of cakes. They’re too sweet for my liking, and I always feel a little guilty after indulging in a slice. But this fresh strawberry cake? It’s different. It’s light, refreshing, and bursting with real strawberry flavor.
Fresh Strawberry CakeIngredients
1 cup unsalted butter, softened
2 cups granulated sugar
4 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk
2 cups chopped fresh strawberries
Instructions
Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
In a separate mixing bowl, whisk together flour, baking powder, baking soda, and salt.
Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.
Gently fold in chopped strawberries.
Pour batter into prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow cakes to cool completely in pans before removing and frosting as desired.
