Ingredients:
- 1 1/2 cups chocolate cookie crumbs
- 1/3 cup butter, melted
- 3/4 cup heavy cream
- 1 1/2 cups semisweet chocolate chips
- 1/3 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 egg yolks, lightly beaten
- 2 cups milk
- 1 tablespoon butter
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F.
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Press mixture firmly into the bottom and up the sides of a 9-inch tart pan. Bake for 10 minutes, then set aside to cool.
- In a small pot, heat heavy cream over medium heat until simmering. Remove from heat and whisk in chocolate chips until smooth. Pour mixture into prepared tart shell and allow to chill until set, about 1 hour.
- In a medium saucepan, combine sugar, cornstarch, and salt. Gradually whisk in egg yolks and milk until smooth. Cook over medium heat, whisking constantly, until mixture thickens and boils. Chocolate Mousse Cake
Ingredients:
For the cake:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
1 cup sugar
1 cup buttermilk
2 eggs
For the mousse:
8 oz. chocolate, chopped
4 oz. cream cheese, softened
1 1/2 cups heavy cream
1/2 cup powdered sugar
Instructions:
- Preheat oven to 350°F. Grease a 9-inch cake pan and set aside.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat together oil and sugar until well combined. Add buttermilk and eggs and beat until smooth.
- Add wet ingredients to the dry ingredients and stir until just combined.
- Pour batter into greased cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely.
- Meanwhile, make the mousse. In a medium bowl, beat cream cheese until smooth. Add heavy cream and powdered sugar and beat until stiff peaks form. Fold in chopped chocolate.
- Using a sharp knife, slice cooled cake in half horizontally. Spread mousse on bottom layer and top with second layer. Spread remaining mousse on top and sides of cake. Chill for at least 30 minutes before serving.
