Fresh Strawberry Cake with Cream Cheese Icing
This cake is the perfect dessert for any occasion. The moist cake is made with fresh strawberries and has a creamy cream cheese icing. Here’s what you’ll need:
Ingredients:
2 cups of diced fresh strawberries
1 tbsp of cornstarch
2 cups of all-purpose flour
1 tbsp of baking powder
1/2 tsp of baking soda
1/2 tsp of salt
1/2 cup of unsalted butter
1 1/4 cups of granulated sugar
2 large eggs
1/2 cup of buttermilk
1/4 cup of vegetable oil
1 tsp of vanilla extract
8 oz of cream cheese, softened
1/4 cup of unsalted butter, softened
2 cups of powdered sugar
To make the cake:
Preheat your oven to 350°F and grease a 9-inch cake pan with butter or cooking spray.
In a bowl, mix the diced strawberries and cornstarch together and set aside.
In a separate bowl, sift the flour, baking powder, baking soda, and salt together.
In a large mixing bowl, cream the butter and sugar until fluffy.
Add the eggs, one at a time, mixing well after each addition.
Add the flour mixture, buttermilk, vegetable oil, and vanilla extract to the bowl and mix until just combined.

In a large mixing bowl, beat the butter until creamy.
Add the powdered sugar, one cup at a time, and beat until fluffy.
Add the diced strawberries and beat until combined.
Once the cake has cooled, spread the buttercream icing onto one of the layers, then place the second layer on top. Spread more icing on the top layer and around the sides of the cake.
