In a large mixing bowl, beat the butter on medium speed until creamy.
Add 4 cups of powdered sugar, one cup at a time, beating well after each addition.
Stir in the chopped strawberries and vanilla extract.
Add heavy cream one tablespoon at a time until desired consistency is reached.
Add a pinch of salt and beat until well combined.
Spread the frosting evenly over the cooled cake and top with fresh sliced strawberries if desired. This cake is best served chilled, so pop it in the fridge for a couple of hours before serving. Your taste buds will thank you!
