Ingredients:
1 cup unsalted butter, room temperature
2 1/2 cups all-purpose flour
1/4 cup vegetable oil
2 1/2 cups granulated sugar
4 large eggs
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk, room temperature
1 tablespoon vanilla extract
1 1/2 cups diced fresh strawberries
Instructions:
Preheat oven to 350°F. Grease a 9x13 inch baking dish.
In a medium-sized mixing bowl, beat the butter until creamy.
Add vegetable oil and sugar and cream together until airy and light.
Add eggs one at a time, making sure each egg is completely mixed in before adding the next.
In a separate mixing bowl, combine the flour, baking powder, baking soda, and salt.
Add the dry ingredients to the creamed mixture, alternating with the buttermilk and vanilla. Mix until well combined.
Once everything is well combined, gently fold in the diced strawberries.
Pour the batter into the prepared baking dish and bake in the preheated oven for 35-40 minutes, or until a toothpick comes out clean when inserted into the center of the cake.
Remove the cake from the oven and allow to cool completely before serving.
