With its perfect blend of rich, buttery cake and sweet, chewy fruits and nuts, this pecan fruit cake is nothing short of a holiday miracle. To start, preheat your oven to 325°F and grease a 9-inch cake pan. In a large bowl, cream together 1 cup of softened butter and 1 1/2 cups of granulated sugar until light and fluffy. Add in 4 eggs, one at a time, followed by 2 teaspoons of vanilla extract. In a separate bowl, whisk together 3 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
