Today I want to share with you my all-time favorite tuna and sweetcorn sandwich recipe. This sandwich is perfect for a quick lunch or even a light dinner. The best thing about it is how easy it is to make since the key ingredients are probably already in your pantry.

Plated Tuna and Sweetcorn Sandwich
Ingredients:
1 can of tuna
1/4 cup of sweetcorn
1 tablespoon of mayonnaise
2 slices of bread
1 tablespoon of butter
Salt and pepper to taste
Instructions:
Open the can of tuna and drain the excess liquid.
Add the tuna to a bowl and mix in the sweetcorn and mayonnaise.
Toast the two slices of bread to your preference.
Spread butter on one side of each of the toasted slices of bread.
Divide the tuna and sweetcorn mixture evenly between the two slices of bread.
Add salt and pepper to taste.
Serve and enjoy!

Tuna and Sweetcorn Cheese Melt Sandwiches
Ingredients:
1 can of tuna
1/4 cup of sweetcorn
1 tablespoon of mayonnaise
2 slices of Vienna bread rolls
1/2 cup cheddar cheese, grated
1 tablespoon of butter
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F.
Open the can of tuna and drain the excess liquid.
Add the tuna to a bowl and mix in the sweetcorn and mayonnaise.
Spread the tuna and sweetcorn mixture on top of one slice of bread.
Top the tuna and sweetcorn mixture with the grated cheddar cheese.
Add salt and pepper to taste.
Place the second slice of bread on top to form a sandwich.
Spread butter on the outside of each slice of bread.
Sprinkle poppy seeds on top of the buttered bread.
Place the sandwich on a baking sheet and bake for 5-7 minutes or until the cheese is melted and the bread is crispy.
Remove the sandwich from the oven, slice it in half, and enjoy!
