Let’s talk about one of my favorite healthy comfort foods - the baked potato. But not just any baked potato, this one is loaded with tuna, sweetcorn, red onion, and mayo. You won’t even feel guilty about indulging in this delicious dish.
Ingredients:
- 1 large baking potato - 1 can of tuna - 1/4 cup of sweetcorn - 1/4 of a red onion, chopped - 1 tablespoon of mayo - Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C). 2. Scrub the potato clean and pierce it a few times with a fork. 3. Place the potato on a baking sheet and bake in the oven for 45-60 minutes, or until it is soft when poked with a fork. 4. While the potato is baking, prepare your tuna filling. Drain the can of tuna and mix it with the sweetcorn, chopped red onion, and mayo. Add salt and pepper to taste. 5. Once the potato is done, remove it from the oven and slice it open lengthwise. Fluff up the insides with a fork. 6. Spoon the tuna filling into the potato and serve hot.
