What’s up y’all, it’s lunch time and I’ve got some bomb jacket potato recipes for y’all to try out. These are perfect for school or work, and they’re not only delicious but also healthy.

Tuna and Sweetcorn Jacket Potatoes

For this recipe, you’ll need:

• 4 large potatoes
• 1 can of tuna, drained
• 1/2 cup sweetcorn
• 1/4 cup mayonnaise
• 1/4 cup plain yogurt
• 1 tablespoon mustard
• 2 green onions, chopped
• Salt and pepper to taste

Preheat your oven to 200°C. Pierce each potato several times with a fork and place them on a baking sheet. Bake for an hour or until tender. While the potatoes are baking, mix together the tuna, sweetcorn, mayonnaise, yogurt, mustard, green onions, salt, and pepper. Once the potatoes are done, cut them in half lengthwise and top with the tuna mixture.

Jacket Potato and Egg Salad

For this recipe, you’ll need:

• 4 large potatoes
• 4 hard-boiled eggs, chopped
• 1/4 cup mayonnaise
• 2 tablespoons plain yogurt
• 1 tablespoon mustard
• 2 green onions, chopped
• Salt and pepper to taste
